Adding toasted coconut is a wonderful idea and I think would add a nice texture. Next time will use more butter and less oatmeal to get a more runny product.

I think it might change the consistency of the cookies a little bit if you reduce the amount of sugar, but you could always try it and see what happens. SMH.
