I learned that this was a mistake because the papers stick on the muffin as well! I have made these twice now and they turned out perfectly. Looking forward to making these again with some experimentation! I also ground up flax seed and hemp seed to mix in with the oats for an extra protein boost. oh, interesting! I tried these today and they won’t get done…the temperature was too hot. Good recipe though! I think this is now my “go to” gluten free muffin recipe to which I can add other ingredients like pumpkin or zucchini! Hey there! The recipe call for 1.5 cups of milk (so one and one half cups). I let the batter with steel cut sit a few minutes to try to absorb the liquid better, but next time I will also reduce the heat, maybe to 350* and bake longer, maybe closer to the 20 minute mark (the regular oatmeal muffins were done in about 14-15 minutes at 400*).
