I would recommend the 12 half pan lightweight metal box: The professional grade is called the Artists' Watercolour or the Professional Artists' Watercolour.

Do art store sell the half pans individually? I had the compact set first, but wanted a few more colors (beginner) and and to have a set portable enough for a road trip we are going on soon. Bad design, I have empty field boxes that I could put these pans in but the paints are not worth it to me. The results from full strength color down to washes are grainy (not in a good way) chalky and rough to the point of the paint feeling like light to medium grit sandpaper. What this means is instead of the original pigment used to create the colour, some other pigments are used to imitate the colours of the actual pigments. Here's the colour mixing chart. Well, I find it difficult to tell the different if they are same grade. If you don't have the last plastic divider to hold the last row of pans, you can sort of fit 4 full pans, two on the left, and two on the right. You will notice in the video the only thing holding the pans in place are the two long thin pieces of plastic. I also like that the second palette space is detachable for saving some space on my small art desk.
The amount of pigment controls the intensity of the colours.

I think mixing on metal feels better than on plastic.

I put a small medicine dropper in the little space so I can drop water into the pans or to transfer colors or washes on my palette. I recommend using a pen knife to carefully cut out the unused Daler Rowney paint that you don't want. It is made from fine quality, mold-made, wood-free paper to ensure maximum stability and is acid-free for extensive life without deterioration. Cotman Water Color Paper is an inexpensive mold-made paper made exclusively to Winsor & Newton's exacting specifications. I also swatched all of them out on the watercolor paper I typically use and laminated it and keep it in my palette box. I (wife) have the Brush Pen Set and the Compact Set.
